    In order to provide fresh, high-quality product on a year-round basis, California Vegetable Specialties has to maintain a delicate balance between the productive capability of the roots and the wants and needs of our clients.

    All endive is cooled both before and after the harvest. Orders are prepared and staged in a cold room, and great care is taken to pack quality product that can stand up to the rigors of transport and handling, sometimes to markets as distant as Tokyo and Buenos Aires. Many of our customers receive their endive via air shipments from the San Francisco International Airport, just one hour from our plant in Rio Vista.
